INGREDIENTS
- 1½ Cups all-purpose flour
- 1 tsp baking soda
- zest of lemon
- ½ tsp salt
- ½ cup unsalted butter
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
INSTRUCTIONS
- Preheat oven on 350degrees
- In a small bowl, whisk together flour, baking powder, baking soda and ½ teaspoon salt. In a large bowl, using an eclectic mixer, beat butter on medium, add granulated sugar and continue to beat until light and fluffy. Add eggs, one at a time, beating after each addition
- With mixer on low, gradually add flour alternating with 2 additions of buttermilk. Beat in vanilla then fold in lemon mixture.
- Transfer butter to pan and bake until golden brown
