If you are lemon crazy like me, you will really love to give it a try. lemon cake recipe is fluffy, tangy and so easy to make. Every bite burst with flavor.


  • 1½ Cups all-purpose flour
  • 1 tsp baking soda
  • zest of lemon
  • ½ tsp salt
  • ½ cup unsalted butter
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract


  • Preheat oven on 350degrees
  • In a small bowl, whisk together flour, baking powder, baking soda and ½ teaspoon salt. In a large bowl, using an eclectic mixer, beat butter on medium, add granulated sugar and continue to beat until light and fluffy. Add eggs, one at a time, beating after each addition
  • With mixer on low, gradually add flour alternating with 2 additions of buttermilk. Beat in vanilla then fold in lemon mixture.
  • Transfer butter to pan and bake until golden brown

Overripen Bananas are the best secret ingredient for those moist and delicious banana muffins. DON’T THROW THEM AWAY!


  • ½ Cup unsalted butter
  • 2/3 cup sugar
  • 2 large eggs
  • 3 bananas, very ripe
  • 1 tsp vanilla extract
  • 1½ cups all purpose flour
  • ½ tsp baking soda


  • Preheat oven to 350F and line muffin tin with paper liners
  • In a mixing bowl, cream together 8 tbp soften butter with 2/3 cup sugar
  • Add 2 lightly beaten eggs
  • Add 3 mashed bananas and 1tsn vanilla extract and mix until blended
  • In a bowl, whisk together dry ingredients, 1½ cups flour, soda and salt. Mix the dry ingredients into wet ingredients


Besides Malawi being well known for its smiling, friendly people, it is as well best known for its rare, simple to cook and delicious food.

Today lets cook a Malawian snack (zitumbuwa)

  • 3 ripe bananas
  • 1 teaspoon sugar
  • 1/2 cup cornmeal (Ufa)
  • 1 pinch salt


  • Mash the banana and mix well with salt, sugar and Ufa
  • Heat oil in a deep pan until it splattered when a drop of water is dropped in.
  • Fry spoonfuls of this mixture in the very hot oil
  • Turn to cook on all sides until light golden colored
  • Remove with spotted spoon to paper towel to absorb



4 big Tilapia fillets

2 table spoon Lemon Juice

200 gram Flour

1 chopped Large Onion

2 table spoon Curry spice

1 cup Water

1 chopped Carrot

1 chopped Green Pepper


Clean, salt and sprinkle fillets with lemon juice

Roll in flour

Heat about 4 tablespoons of oil in a large frying pan and fry the fillets about 4 minutes per side and remove the fillets.

In the pan add the chopped onion and fry until translucent (about 5 minutes)

Mix in 2 Tablespoons of the Malawi curry spice blend and fry with the onions for about 2 minutes

Add the rest of the curry spice blend along with 1½ cups of water stirring so all the spice blend is nicely incorporated into the water.

Add in the chopped carrots and green pepper and turn heat to a simmer.

Simmer until the vegetables are soft about 10 minutes.

Close the lid and let the fish rest in the sauce for a few minutes.

Serve with Nsima or rice.

You will need

1 egg, beaten

1/2 cup sugar

1/2 cup milk

2 Tbsp. butter, melted

2 cups white flour 2 tsp. baking powder

How to do it:

Bring all ingredients to room temperature before mixing them together. Mix all the ingredients together, adding more flour if necessary. The dough should be soft, but not sticky. Roll the dough on a lightly floured board until it is about 1/4 inch think. Cut into triangles and fry in hot oil. Fry until both sides are golden brown. Remove Mandasi from oil and drain on paper towels or newspaper. Sprinkle with powdered sugar, if desired. Mandasi are best served warm.

Strawberry frozen yogurt is beyond easy. It takes just three ingredients and 30 seconds. Its healthy, delicious, fruity and perfect quick desert for hot days.


  • A blender
  • 1 cup yogurt (dairy or dairy – free)
  • frozen strawberries
  • 1 table spoon honey or maple syrup (In malawi honey is locally found)


Add the yogurt, honey and strawberries to your blender, turn the blender on high and use the tamper to push the frozen strawberries into the blades. In 30seconds you will have the frozen yogurt. Scoop out the frozen yogurt and serve immediately or transfer to a storage container and freeze.
