If you are lemon crazy like me, you will really love to give it a try. lemon cake recipe is fluffy, tangy and so easy to make. Every bite burst with flavor.
1½ Cups all-purpose flour
1 tsp baking soda
zest of lemon
½ tsp salt
½ cup unsalted butter
1 cup granulated sugar
2 large eggs
1 tsp vanilla extract
Preheat oven on 350degrees
In a small bowl, whisk together flour, baking powder, baking soda and ½ teaspoon salt. In a large bowl, using an eclectic mixer, beat butter on medium, add granulated sugar and continue to beat until light and fluffy. Add eggs, one at a time, beating after each addition
With mixer on low, gradually add flour alternating with 2 additions of buttermilk. Beat in vanilla then fold in lemon mixture.
Transfer butter to pan and bake until golden brown
Bring all ingredients to room temperature before mixing them together. Mix all the ingredients together, adding more flour if necessary. The dough should be soft, but not sticky. Roll the dough on a lightly floured board until it is about 1/4 inch think. Cut into triangles and fry in hot oil. Fry until both sides are golden brown. Remove Mandasi from oil and drain on paper towels or newspaper. Sprinkle with powdered sugar, if desired. Mandasi are best served warm.

1 table spoon honey or maple syrup (In malawi honey is locally found)
Add the yogurt, honey and strawberries to your blender, turn the blender on high and use the tamper to push the frozen strawberries into the blades. In 30seconds you will have the frozen yogurt. Scoop out the frozen yogurt and serve immediately or transfer to a storage container and freeze.
