BANANA MUFFINS

Overripen Bananas are the best secret ingredient for those moist and delicious banana muffins. DON’T THROW THEM AWAY!

INGREDIENTS

  • ½ Cup unsalted butter
  • 2/3 cup sugar
  • 2 large eggs
  • 3 bananas, very ripe
  • 1 tsp vanilla extract
  • 1½ cups all purpose flour
  • ½ tsp baking soda

INSTRUCTIONS

  • Preheat oven to 350F and line muffin tin with paper liners
  • In a mixing bowl, cream together 8 tbp soften butter with 2/3 cup sugar
  • Add 2 lightly beaten eggs
  • Add 3 mashed bananas and 1tsn vanilla extract and mix until blended
  • In a bowl, whisk together dry ingredients, 1½ cups flour, soda and salt. Mix the dry ingredients into wet ingredients
