Overripen Bananas are the best secret ingredient for those moist and delicious banana muffins. DON’T THROW THEM AWAY!
INGREDIENTS
- ½ Cup unsalted butter
- 2/3 cup sugar
- 2 large eggs
- 3 bananas, very ripe
- 1 tsp vanilla extract
- 1½ cups all purpose flour
- ½ tsp baking soda
INSTRUCTIONS
- Preheat oven to 350F and line muffin tin with paper liners
- In a mixing bowl, cream together 8 tbp soften butter with 2/3 cup sugar
- Add 2 lightly beaten eggs
- Add 3 mashed bananas and 1tsn vanilla extract and mix until blended
- In a bowl, whisk together dry ingredients, 1½ cups flour, soda and salt. Mix the dry ingredients into wet ingredients
